Rice Cooker Chicken & Sausage Jambalaya


This dish gives you all the southern comfort feelings from your rice cooker. I was so excited to find a dish that wasn’t just rice to make in my rice cooker and if you have one I highly recommend this!

Total Time: 55 Minutes


Ingredients (Makes 4 Servings):

  • 3 tbsp butter
  • 1 small onion, diced ~1/2 – 3/4 cup
  • 1 red bell pepper, diced
  • 2-3 cloves garlic, minced
  • 13.5 oz. andouille sausage, sliced
  • 1 cup rice
  • 3 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 tsp creole/Cajun seasoning
  • 1/4 tsp pepper
  • 1/4 cup chopped parsley

Directions:

  1. In a large skillet, heat butter. Add onion and red pepper – sauté for 3-5 minutes until tender. Add garlic and sausage – cook until all is browned.
  2. Add rice and broth to rice cooker. Add sautéed veggies and sausage to rice cooker. Add chicken and seasoning to rice cooker. Stir everything until all is well mixed.
  3. Set rice cooker to cook. When rice is done stir in parsley – should take around 20-25 minutes.
