This dish gives you all the southern comfort feelings from your rice cooker. I was so excited to find a dish that wasn’t just rice to make in my rice cooker and if you have one I highly recommend this!
Total Time: 55 Minutes
Ingredients (Makes 4 Servings):
- 3 tbsp butter
- 1 small onion, diced ~1/2 – 3/4 cup
- 1 red bell pepper, diced
- 2-3 cloves garlic, minced
- 13.5 oz. andouille sausage, sliced
- 1 cup rice
- 3 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 tsp creole/Cajun seasoning
- 1/4 tsp pepper
- 1/4 cup chopped parsley
Directions:
- In a large skillet, heat butter. Add onion and red pepper – sauté for 3-5 minutes until tender. Add garlic and sausage – cook until all is browned.
- Add rice and broth to rice cooker. Add sautéed veggies and sausage to rice cooker. Add chicken and seasoning to rice cooker. Stir everything until all is well mixed.
- Set rice cooker to cook. When rice is done stir in parsley – should take around 20-25 minutes.
